Jar Relish the Barossa Authentic Butter Chicken Sauce

½ medium sized cauliflower, cut into florets

 

Kachumba

125g Cherry tomatoes, halved

1 spring onion, finely sliced

1 tablespoon coriander, roughly chopped

1 tablespoon white wine vinegar

 

Raita

¼ continental cucumber, finely diced

1 tablespoon mint, roughly chopped

100g plain yoghurt

 

Pappadams and rice to serve

 

Simmer cauliflower in sauce until tender (approximately 15 minutes). For the Kachumba -mix tomatoes, spring onion, coriander and vinegar together, season and set aside. For the Raita - mix cucumber, mint and yoghurt. Serve with Pappadams and rice.
